Holland America Reveals Refreshed Canaletto Menu

Fresh pasta made onboard and authentic Italian dishes are featured on Holland America Line’s updated Canaletto menu.

At Canaletto, a specialty restaurant only open for dinner, Holland America Line’s chefs prepare fresh pasta every day. There are three courses on the updated menu, including small plates, pasta, entrees, and desserts. In addition, a daily special will be offered.

According to Michael Stendebach, Holland America Line’s vice president of food and beverage, “We want the updated menu to reflect an Italian experience focusing on freshness and authenticity.” No matter where our ships cruise, each course offers a selection of Italian dishes and cocktails, bringing the flavors of Italy on board.

There is a wide selection of small plates at Canaletto, such as the popular Antipasto Plate, which features prosciutto di parma, finocchiona salami, truffle salami, Terre Ducali coppa, Parmigiano Reggiano and Sicilian olives. The menu also includes grilled tiger shrimp, burrata, canaletto salad, and veal and sage meatballs.

Seared Mediterranean Seabass and Mussels, Scallop and Calamari Trenette, as well as Casarecce Pesto Genovese are some of the new dishes at the restaurant. Additionally, guests can enjoy Chianti-braised beef short ribs and herb and parmesan-crusted chicken breasts.

A variety of Italian desserts are offered, including Tiramisu, Lemon Ricotta Baked Cheesecake, Chocolate Hazelnut Tart, Affogato, and freshly made gelato.
